A flavorful and aromatic Eastern-style tomato and egg curry, infused with the warmth of cloves, perfect for a comforting meal.
Method

Boil the eggs until hard-boiled, then peel and set aside.

Heat oil in a pan over medium heat. Add cumin seeds and sauté until fragrant.

Add minced garlic and cook for 30 seconds.

Stir in the chopped tomatoes, turmeric, chili powder, and ground cloves. Cook until tomatoes are soft and oil separates, about 10 minutes.

Gently add the boiled eggs into the sauce, spooning some of the sauce over them.

Simmer for another 5 minutes to let flavors meld.

Taste and adjust salt as needed.
